No matter what time of year it is, this warming roasted vegetable bowl is my go-to for comfort food.

It’s packed full of a variety of vegetables, chickpeas, and a nice little heat thanks to the chilli flakes.

Serves 4

Warming Roasted Vegetable Bowl Ingredients

Roasted Veg:

  • Mixed peppers x2
  • Red onions x2
  • Courgettes x2
  • Garlic cloves x6
  • X1 tin of chickpeas
  • a drizzle of olive oil
  • Salt and pepper for seasoning


  • X1 tin of chopped tomatoes
  • X2 tbsp tomato puree
  • X1 tsp chilli flakes
  • Salt and pepper for seasoning


How to Make Warming Roasted Vegetable Bowl


1: Preheat the oven to 180 degrees (fan oven)

2: Chop all the vegetables into bite-sized pieces and thinly slice the garlic cloves

3: Rinse and drain the chickpeas

4: Combine all of the above over two baking trays with a drizzle of olive oil on each. Coat the vegetables evenly and season with salt and pepper

5: Place the baking trays in the oven for 30-45 minutes until the veggies are soft

6: Whilst the vegetables are roasting start the sauce

7: Combine all the sauce ingredients into a large saucepan because it needs to be able to hold everything later

8: Simmer the sauce on low heat for around 20 minutes

9: When the vegetables are cooked pop them in the saucepan and simmer for 5 more minutes

These roasted vegetables can be eaten on their own, or you can serve them with your choice of sides. We’ll sometimes have it with brown rice, some crusty sourdough, or served over a jacket potato.

Roasted Vegetables

  • 2 mixed bell peppers
  • 2 red onions
  • 2 courgettes
  • 6 garlic cloves
  • 1 tin of chickpeas
  • Drizzle of olive oil
  • Salt & Pepper for seasoning


  • 1 tin of chopped tomatoes

  • 1 tsp chilli flakes
  • Salt & Pepper for seasoning

  • While the vegetables are cooking, start on the sauce
  • Combine all of the sauce ingredients in a saucepan that can hold everything later, and simmer for around 20 minutes
  • Once the vegetables are cooked, add them to the sauce and simmer for another 5 minutes
  • Serve and enjoy!
