Easy Vegan Paella

A vegan paella recipe is an excellent alternative to the original Spanish paella that includes either fish or meat.

When going plant-based it can be hard to try and find alternatives to your favourite dishes. This vegan paella is inspired by Vegan One Pound Meals by Miguel Barclay which you can find on Amazon here.

A delicious dish. And you won’t miss the meat!

 

Serves 4

 

Ingredients:

  • X1 red pepper (cut into bite-size pieces)
  • X1 yellow pepper (cut into bite-size pieces)
  • Half a jar of roasted red peppers (chopped)
  • X1 red onion (diced)
  • X2 garlic cloves (finely chopped)
  • X2 tsp turmeric
  • X2 vegetable stock
  • 200g frozen peas
  • Half a jar of cooked artichokes
  • 225g paella rice
  • 700/900ml boiled water
  • X1 tbsp of olive oil
  • Salt and pepper for seasoning
  • X1 lemon (cut into wedges)

Directions:

1: Add the stock cube to the measuring jug and add 500ml of boiling water ready to use

2: Heat up the pan on medium heat with the olive oil and fry the onions until soft

3: Add the garlic, be careful not to let it burn, and cook for a minute, stirring continuously

4: Add the red, yellow, and roasted peppers along with the paella rice and turmeric

5: Stir for a minute coating the rice with the oil and turmeric and season with salt and pepper

6: Slightly turn down the heat and add 100ml of stock, stirring continuously while the water simmers and is absorbed by the rice. Gradually add 200ml of stock at a time until the rice is tender and cooked. (Once you’ve used the first 500ml add the second stock to the measuring jug and add another 400ml water, to be used gradually as needed depending on how you like your rice cooked.

7: When the rice is cooked, stir in the frozen peas and cook for a further 3 minutes.

8: Stir in the artichokes

9: Remove from the heat and season as necessary

10: Once served add a squeeze of lemon.
