Eating plant-based doesn’t have to be boring, and this bang-bang vegetable dish is certainly not!
Bang Bang is traditionally a deep-fried chicken dish served with spicy mayo sauce, and replacing chicken with vegetables, in my opinion, makes it even tastier! This is an easy healthy dinner recipe that can be served on its own and can be used as leftovers for lunch the next day.
Ingredients
- X4 carrots
- X2 bell peppers
- X2 sweet potatoes
- ½ head of cauliflower
- X4 garlic cloves
- X2 tbsp Sesame oil
- Salt and pepper
Sauce
- X2 garlic cloves
- X1 600g passata
- X1 red onion
- X1 tsp chilli flakes
- X1 tbsp smoked paprika
- X2 tsp maple syrup
- Salt and pepper
How to make
- Preheat the oven to 180 degrees
- Chop up the carrots, peppers, sweet potatoes, and cauliflower in large chunks, sprinkle with 1 tbsp of sesame oil, and roast in the oven for 30-40 minutes
- While the vegetables are roasting start on the sauce
- Use the other tbsp of sesame oil and heat in a pan
- Fry the garlic and onion, stirring so as not to burn, until translucent and soft
- Add in the passata, chilli flakes, smoked paprika, and maple syrup, and season with salt and pepper. Simmer gently, stirring occasionally
- When the vegetables are roasted, add into the sauce, mix thoroughly so the vegetables are coated in the sauce, and simmer for another 5 minutes
Sprinkle with sesame seeds and spring onions and serve!
